Squire Mountain BAKED HADDOCK, SCALLOPS OR SEAFOOD


1 lb.  haddock                                                                                                oven : 350°
2 cups milk                                                                                                    cook : 30 min.
8 level tablespoons margarine or butter
8 level tablespoons flour
2 (11oz.) tub cheese (Cheddar, Horseradish, or Garlic & Herb)
1-sleeve saltines crackers (crushed)

First, make a white sauce: Melt margarine or butter. Mix flour into margarine. Add milk slowly until it thickens (like pudding).

Then, mix in (2) 11 oz tubs of tub cheese. Put a pint of light cream on bottom of casserole dish. Place haddock into cream. Pour sauce mixture over haddock. Spread crushed saltine crackers on top with a few pieces of margarine on top of crackers. Bake for 30 minutes or until mixture bubbles.

Scallops (because of size) would be in a smaller casserole dish and half of the sauce mixture would be used.

Seafood casserole (with haddock, shrimp, scallops, etc) would be the same as the haddock recipe.
